Malai is the defining flavor of traditional kulfi, and as an ingredient it serves as the backbone of all other flavors. Malai is the cream that forms on the surface when milk is heated. This cream is high in milkfat and carries a distinctive cooked milk flavor. When making kulfi, malai is the most important ingredient. Typically, other flavorings are layered on top of malai. This is why all of our ice creams have a consistently creamy, milky profile across every flavor. In short, there is no kulfi without malai.
